Shepherds Pie

So I actually learnt this recipe from my mum who had been cooking it for years for everyone. There is no ready made sachet to add into it, it tastes so much better than any shop bought shepherds pie and it can be made in advance and left in the fridge for up to 2 days.
Only takes an hour in the oven on 180c fan and roughly 45 minutes preparation time!
This recipe serves 4 people, you can easily add less mince or more depending on the amount you are cooking for.

Ingredients

750g Mince
1Kg Potatoes
2 Carrots, sliced
1 Medium onion
2 Tbsp Brown sauce
2 Tbsp Tomato puree
2 Oxo cubes
1 Cup Boiling water

Butter to add to the potatoes when mashed
Grated Cheese to add to the mash and on top before cooking


Method



  • Start off by slicing up the 2 carrots and placing them into a frying pan with a small amount of oil.
  • Next cut up the onion and place that in the frying pan as well and place the frying pan on a low heat. 
  • While the carrot and onion is frying very slowly it is time to peel the potatoes, cut up into small chunks and place in a saucepan half full of water and bring to the boil on the hob.
  • Once boiling, let the potatoes simmer for 10-15 minutes depending on the size of the potatoes they may need doing for slightly longer. 
  • Drain off the potatoes, add the butter and cheese and mash together until it is smooth. Leave in the saucepan until it is needed later on. 
  • By now the carrots and onion should be cooked so it is time to add the mince and fry that for 10-15 minutes. 
  • Once all the mince is brown then place it into a heatproof dish or casserole dish. 
  • Next you want to mix in the brown sauce,tomato puree, oxo cubes and the cup of boiling water.
  • Place the mash on top of the mince and fluff up with the back of your fork.
  • I grated some cheese on top of the Shepherds pie. 
  • Finally place it in the oven for 1 hour.

There you have it, a delicious dish for those cold,dark evenings when you just want to snuggle up in front of the tv.
